Rare Blancs natural sparkling wine is made from the Plyto grape variety, sourced from a single 35-year-old vineyard located on the west side of Heraklion, in Zone 6, at an altitude of approximately 750m above sea level. It is a late-harvest wine. The winemaking process includes a night harvest. The grapes are then stored in a refrigerator for two weeks, then they are gently pressed using a traditional basket press, and only the free-run must is used for fermentation.

The wine is then bottled, and the remuage (riddling) process is carried out for the first three months while the lees remain soft. The bottles are initially stored horizontally and later turned upside down, where they remain for another three months. Finally, the wine is disgorged without any additives, with only a top-up of still Plyto wine.
